Who are we?
Etivaz PDO is a hard cheese made by hand between 10 May and 10 October from raw milk that is not transported. More than 3,000 cows graze on some 130 mountain pastures at altitudes of between 1,000 and 2,000 metres, producing rich, full-flavoured milk every day that is heated exclusively over a wood fire in copper boilers. The maturing process brings out the rich, powerful aromas of the wide range of herbs the cows have eaten.
